Chicken & Savoie's® Andouille Gumbo

Chicken & Savoie's® Andouille Gumbo is a hearty and flavorful Cajun dish that's perfect for any occasion. Made with tender boiled and de-boned sliced chicken breast, savory sliced Savoie's® andouille sausage, and a rich roux thickened broth, this gumbo is bursting with aromatic vegetables like onions, bell peppers, celery, and garlic. Ingredients

  • 3 lbs chicken breast (boiled, de-boned and sliced)
  • 1 lb Savoie's® Andouille Sausage (sliced)
  • ½ cup oil
  • 1 cup all purpose flour
  • 3 ½ cups onions (chopped)
  • 1 ½ cups green onion (chopped)
  • ½ cup bell pepper (chopped)
  • ¼ cup celery (chopped)
  • 1 jalapeno (optional) (minced, ribs and seeds removed)
  • ½ cup parsley (chopped)
  • 2 tbsp garlic (chopped)
  • 10 cups chicken broth
  • 1 cup dry white wine
  • salt and cayenne pepper to taste
  • ​​​​​filé seasoning (optional)

Directions

  • Heat oil at medium heat, stirring in flour to make a dark roux.
  • Add onions, green onions, bell pepper, celery, jalapeno, and parsley, while continuing to stir.
  • Add one cup of chicken broth to the roux and stir to form a thick paste.
  • Add remaining broth, garlic, and wine, continuing to stir.
  • Add salt and cayenne pepper, chicken breast and Savoie's® andouille sausage.
  • Cover and heat on low for 3 hours.
  • Serve over rice with filé (optional).
