Chicken & Savoie's® Andouille Gumbo
Chicken & Savoie's® Andouille Gumbo is a hearty and flavorful Cajun dish that's perfect for any occasion. Made with tender boiled and de-boned sliced chicken breast, savory sliced Savoie's® andouille sausage, and a rich roux thickened broth, this gumbo is bursting with aromatic vegetables like onions, bell peppers, celery, and garlic. Seasoned with a hint of heat from jalapenos and cayenne pepper, it's simmered to perfection for hours, creating a comforting and soul-warming meal. Ingredients
- 3 lbs chicken breast (boiled, de-boned and sliced)
- 1 lb Savoie's® Andouille Sausage (sliced)
- ½ cup oil
- 1 cup all purpose flour
- 3 ½ cups onions (chopped)
- 1 ½ cups green onion (chopped)
- ½ cup bell pepper (chopped)
- ¼ cup celery (chopped)
- 1 jalapeno (optional) (minced, ribs and seeds removed)
- ½ cup parsley (chopped)
- 2 tbsp garlic (chopped)
- 10 cups chicken broth
- 1 cup dry white wine
- salt and cayenne pepper to taste
- filé seasoning (optional)
Directions
- Heat oil at medium heat, stirring in flour to make a dark roux.
- Add onions, green onions, bell pepper, celery, jalapeno, and parsley, while continuing to stir.
- Add one cup of chicken broth to the roux and stir to form a thick paste.
- Add remaining broth, garlic, and wine, continuing to stir.
- Add salt and cayenne pepper, chicken breast and Savoie's® andouille sausage.
- Cover and heat on low for 3 hours.
- Serve over rice with filé (optional).
