Andouille Fried Rice

Andouille & Fried Rice is a vibrant and flavorful dish bursting with Cajun flair. Featuring savory pieces of Savoie’s® Andouille sausage, mixed with sweet peas and fresh mushrooms, all tossed together in a delectable blend of soy sauce, green onions, and parsley. Served atop a bed of fluffy cooked rice, every bite is a delicious taste of Louisiana fusion.

Ingredients

  • 1 tbsp vegetable oil
  • 1 lb Savoie’s® Andouille Sausage
  • 1 cup frozen sweet peas
  • 1 cup fresh mushrooms (thinly sliced)
  • 3 tbsp soy sauce
  • ¼ cup green onions (finely chopped)
  • 1 tbsp parsley (very finely chopped)

Directions

  • Remove casing from sausage and chop the sausage into small pieces.
  • In a large skillet, heat oil and sausage over medium heat.
  • While stirring with a spoon, crumble sausage.
  • Add sweet peas and mushrooms; cook and stir 10 minutes.
  • Add soy sauce, green onions and parsley; cook and stir another 10 minutes.
  • Add 2 ½ cups of cooked rice and stir well to mix (about 2 minutes).
